Hi! My name is Linda and WELCOME to my blog! I am a plant-based believer, a registered nurse, a wife and best of all a mom! This blog has been a LONG time coming and with a big push from all my patients……here it is! I am super excited to share my ideas, tips and tricks with you! My mission for you and your family is simple to get healthier! I want to share my thoughts, recipes, tips and tricks to help you begin this journey to live more of a whole food plant based (WFPB) lifestyle! My goal is to inspire you to find and incorporate more “real food” into your life from a world that has become so processed…….. and in turn hopefully help improve you & your families overall health.
I am a Clinical Nurse Educator and my speciality has been in oncology. I have been a Registered Nurse for over 21 years. I also have a certificate in Plant-Based Nutrition from eCornell under the study of Dr. T Colin Campbell and I am a life long learner who has always loved good food and cooking. So tying my passion of food and cooking with my career in healthcare was a natural marriage for me and I would love to see healthcare use more food nutrition rather than medications for optimal overall health!
What is a Whole Food Plant-Based Lifestyle you ask? A WFPB is a lifestyle where you eat foods that are from plants! Like fruit, vegetables, tubers, whole grains, nuts, seeds, legumes and you eat very little or no highly refined foods, eat little or no animal products like meat, fish, eggs, milk, butter, cheese. Now hold on do not leave my blog yet! This does not have to be an all or nothing thing…… just changing even 1 meal a week where you cut out your animal products is an accomplishment!! Especially if you eat animal products in every meal.
I want to help you to start your journey into a whole food plant based lifestyle, however I do know it is hard and cooking meals from scratch particularly if you do not have the time or love for being in the kitchen like me, it can be very time consuming, frustrating and quite frankly very discouraging. So, I would like to show you tips and tricks on how to cook, cut corners with your food and still have it full of nutrients and taste great. I would also love to share my thoughts on why this lifestyle can be beneficial to you and your family. While yes, cooking with whole, organic and fresh ingredients is always best it just may not be your reality so do your best when choosing what type of ingredients you use and I will help you start this journey!
A key thing to remember is this is not an ALL or nothing thing! My journey was exactly that…… My journey took time, and my family and I are still on this journey……. it did not happen overnight……and am I 100% whole food plant-based all time…….NO but close to it……and when I find myself slipping and that usually happens because my body tells me! You will see once you transition, your body will crave the healthier stuff so you can feel good. So when you slip….don’t sweat it too much because quite frankly you will feel like crap…..and you and your body will want to get back on your WFPB journey. A side note….Here and at home 🙂 I don’t count calories, carbs, fat, protein etc… So you won’t find me posting any of that here….maybe if I trying to prove a point or something 😉 ….But all I count is…..whole goodness!

My personal story:
I have been a registered nurse for over 21 years and I have worked in the areas of cardiology, emergency rooms, pediatrics, nursing education, home care, corporate nursing and oncology. Truly, I think I have worked in almost every area of nursing at one point in my career. I started out as a cardiac critical care nurse, so I saw heart disease first hand, then I moved to being an Emergency room nurse. There I saw everything and all the acute and chronic diseases that are killing us, heart disease, obesity, uncontrolled diabetes , cancers and so many other diseases. Then from the emergency room I did a little bit of everything and then spent about 12 years mostly in oncology.
I have for the most part of my adult life have always been interested in and followed a “healthy” lifestyle and felt I had “good” nutrition sense. I say that in quotes because looking back on that now I was not living as “healthy” as I could have been nor was my nutritional way of thinking “good”. I have had some nutritional training in college and I was following the media, the diet fads such as….low-carb, atkins, whole 30 etc……….not to say these types of “diets” are bad because some do have good components…. I just divulged myself into research studies, saw real patients outcomes, life experiences with myself and testimonies from physicians and other plant-based peeps that are actually practicing this way. Which I think are more credible sources!
Why in a so called “healthy” nation like the USA with all these fitness facilities, low fat products, high protein bars, shakes, “healthy/low-fat” everything and everywhere…… we currently live in a nation with childhood & adult obesity on the rise, chronic diseases, new cases of cancer and heart disease on the rise ……what is going on here? So I started my personal “clean eating” journey in 2008 while trying to get pregnant and this journey just became bigger and more complex……….and then I started dragging my family along, in a good way 🙂
What made me start doing more research and reading up on nutrition? Well, in my nursing career I starting seeing cancer being diagnosed younger and younger. I saw my personal youngest patient diagnosed with breast cancer at 24 years of age, and this starting to become a “trend” amongst all different types of cancer. I started seeing a rise in colon cancer and it crossing all ethnic lines. Then I started seeing patients being diagnosed in their late 20’s, early 30’s then the cancer becoming very aggressive at 40! I had a couple of “health movement” moments….First was in 2010 after watching the episode of “Food 101” with Michael Pollan on Oprah and then watching “Food Inc” had me re-evalulate what types of food I was eating and where it came from. Then I discovered a blog, which I HIGHLY recommend called “100 Days of Real Food”…..while it is not totally plant-based, Lisa does an amazing job at showing and telling you how to start eating real and clean food. Then another major health movement moment for me was in 2011 after watching the amazingly informative documentary “Forks over Knives”. After watching this documentary my head was spinning…I then read the full book of The China Study by Dr. T Colin Campbell and I really knew I needed to change and then in turn help my patients and then help everyone I could … Help everyone see the truth… see how some foods were making us sick ….so I then started to change the way I looked at food and started incorporating more plant based whole foods in my life…….(now watch What the Health….an AMAZING follow up to Forks over Knives)
I really wondered why after so many years working in healthcare and with such promiante doctors I have never once heard any of them or the nutritionists mention to patients to move towards a whole food plant based diet to improve their health? The REAL reason in a short answer is doctors are not nutritionally trained, nor have the time to really talk to their patients. And as for the nutritionist….well, I think they just have to push what is the easiest and what is less “boat rocking” at their jobs. It is much easier to push those creamy, sugar filled, chemically enhanced drinks towards patients who need calories rather than really sit down and discuss cooking and recipes ……and by the time there is even a nutritionist referral in the hospitals it is often very late and the patients need immediate help. In hospitals or out-patient settings you are on the clock and have to see all your patients in an allotted time frame…who has the time to sit and really educate them! Sad but very true……I also learned that my youngest daughter had an “allergy” that was manifesting in other ways that no doctor (and we went to 3) ever diagnosed! ……..but I did after watching this film………but that will come out in a future blog post that I will be doing. Okay now ……for my big overall health movement moment, when everything came to halt in my household!………
While I have been seeing many patients getting diagnosed younger and younger with breast, lung, colon amongst other types of cancer there was one particular day my “eating life” as I knew it would come to a complete halt! At this point I was already eating pretty clean but we still were eating meat and dairy in our meals and while most of it was organic, free range, grass fed etc…. you get the point……. it was was doing our bodies harm in the long run. I had been off work for just about 10 days and I walked into my patients room who had colon cancer and I was once again, heartbroken! He was 40 years old, a “strong” fireman who had lost so much weight in just 10 days and his colon cancer had taken over his entire body. From all the research that I had already read and all the documentaries I had already watched, I declared that day that I would no longer eat red meat or processed meat …. slowly after that…..all other meat/fish and dairy followed. Now in total truth…..as for my husband and girls they have dramatically decrease their meat consumption but still do consume some… and trust me I’m working hard everyday to get them totally plant-based… it’s my mission…. which is a huge deal since before they were all eating meat in all their meals (breakfast/lunch/dinner)….. so they have definitely improved tremendously…….and me ….Well I am probably at 98%… and my 2% falls in mostly when I am traveling and it usually happens to be in stock form insomething I am eating ….or in the beans already prepared and I really have no other decent options. Now as far as dairy is concerned that is at 99.9% out for all of us! Dairy has been the one culprit we see the most results in the way we look and feel when we eliminated it!
Like I mentioned before my mission for you and your family is simple…..To get healthier! Bottom line is………we are all human and we can fall off the wagon, have our slip ups or whatever you want to call them……we are all allowed to do that! That is life. But what I really want you to get from this blog is to increase your amount of “Fruit and Veggies…. for Life”
