I absolutely LOVE LOVE LOVE this salsa. I can eat it plain, with chips, on top of a tortilla, on sweet potato toast, stuffed inside sweet potatoes, with plantain chips…..the possibilities are endless…..You get the point. This salsa is full of healthy clean eats….and if you want to add a kick of spice to it just add a finely chopped jalapeño pepper to mix. My recipes are the real deal…..meaning no food goes to waste here and my family does not like that spicy kick, so I eliminated the jalapeño pepper. You can also change to red pepper to an orange or a yellow one if that is all you have!
Now, I will focus on the health benefits of mangoes and colored peppers here but do not forget the red onion, cilantro and lime all have amazing health benefits too! So this here salsa is super healthy in my book!
Mangoes I have to say are my absolute favorite fruit…….and people who know me, know I do not like my fruit “ripe” I like my mangoes hard….same way I like my pears, peaches etc…. I like hard fruit…not soft and super sweet….but anyway back to the benefits here…..Mangoes are a great source in fiber, they provide 2.6 g of dietary fiber in a 1 cup serving. Bell peppers! In this recipe you can use red, yellow or orange bell peppers. Any of these colors will not affect the taste that much, although research shows the red peppers has the most health benefits. Too be honest the colored bell peppers all have great health benefits that this post could be 2 pages long. So I will sum it up for you. Also, raw peppers provide their optimal health benefits. Bell peppers are loaded with vitamin c, b6 and a, which help with eye health, your immune system and fight oxidative stress caused by free radical activity in the body. They are rich with antioxidants and anti-inflammatory compounds that are essential for cancer prevention. - 1 Large Mango
- 1 Large Red Pepper
- 1 Thick Slice of Red Onion
- 1-2 tbsp Chopped Fresh Cilantro
- 1-2 Juiced Fresh Limes
- 1 Good Pinch of Sea Salt
- 1 Seeded Jalapeno Pepper Optional
Simple instructions here! Chop, slice or dice all your ingredients (except the lime juice) then add them all to a mixing bowl. Next, add the lime juice to taste preference, sea salt and mix all together. Then cover and store in the refrigerator up to 3 days.
