Sweet potatoes are the nutrition bomb! They are high in vitamin b-6, c and are a good source of vitamin d. They contain iron, magnesium and potassium. They also release their sugars slow and steady into your bloodstream which means no sugar highs which is great for diabetes control. They have fiber in them, which means they keep your digestive system flowing which in turn helps fight diseases such as heart disease, diabetes, diverticular diseases and some cancers. Studies have also shown that they are great for eye health and can help conquer PMS blues. So what is not to love about a sweet potato!
This recipe here is another all in one meal, add a salad and your meal is super complete! This is a portable meal and does not need to be heated up once cooked, so if you need to bring a to-go lunch or dinner this is a great meal. The filling can be eaten on it’s own too! In this meal there is healthy fats, protein and carbs and it fills the belly up….. so what is not to love!
- 2 sweet potatoes
- 1 peppers diced, approx 1 cup, any color peppers
- 1/3 cup frozen or fresh corn
- 2 tbsp diced red onion
- 1 cup black beans
- 1/2 cubed avocado
- 1/2 tsp crushed chipotle chili pepper seasoning
- 1/4 tsp smoked paprika
- 1/2 juice of lime
- pinch of sea salt
Preheat oven to 375F and poke potatoes are few times with fork or knife and place on a baking sheet and bake for approx 1 hr until you can pierce them easily with a fork or knife. While they are baking make your filling
Take all of your ingredients except for the avocado and place them into a mixing bowl and mix. Then juice your 1/2 of a lime into the mix. When the potatoes are done let them cool until you can handle them. Now, add your avocado to the filling mixture. Then once your potatoes have cooled enough to handle, make a oval cut to the top of the potatoes and pour on the mixture. You could scoop out some flesh but I tend not to for this recipe. I just add the filling to the top of the sweet potatoes. Sprinkle some additional sea salt if you would like and enjoy!
