Okay….These roasted artichoke bites are soooooooooo good…I would plan a can per person! Every time I make these for home or an event they are first to go and people are always asking for more. These little bites are even good alone….. but here you will see them pictured and served with my Vegan Russian Spread and that spread in itself also is a spread for EVERYTHING!!
Artichoke hearts have cholesterol lowering properties, liver cleansing and detoxifying effects, have antioxidants, are high in fiber and help with your digestion system. So while your enjoying these scrumptious bites, you can think about all the health benefits too! 😉
So when you crack open you can of artichoke hearts, drain all the liquid off. Preheat your oven at this point. Then I slice them in 1/2 and lay them on the towel to dry. Be careful when slicing them as they are very fragile. I usually will then lay them on 2 kitchen towels and let them rest there for about 30 minutes to dry out a little.
Next, coat your baking sheet with the EVOO and spread it all around the pan. Then place the artichokes open heart down, given them a little swirl to coat them and then turn them over with the insides facing up. This is how they will bake in the oven and then bake away.
While your artichokes are drying or baking you can make the spread! Once they come out of the oven they are ready to serve….ENJOY and make sure you eat some before everyone else eats them all up.
- 2 cans approx 14oz each artichoke hearts
- 1 Tbsp extra virgin olive oil
- 1/4 cup Russian spread for dipping in recipe index
Preheat oven to 375F and open and drain the liquid off of both cans of artichoke hearts. Slice them in 1/2 gently and then let them "dry out" on kitchen towels for approx 30mins. Then spread the EVOO on a baking sheet and put them cut side down first and swirl them around a bit to coat them and place the cut side up. Then place the pan with the artichokes hearts cut side up in the oven and bake for 45 mins until crispy brown. Remove from oven and serve alone or with the Russian spread a dip!
